Cut your organic farm-fresh sweet potato into 8 slices.
Toss in a bowl with:
A pinch of cinnamon
A pinch of nutmeg
4 tbsp of maple syrup
2 tbsp XVO
Salt and pepper
Place a large piece of foil on your counter. Now place a large piece of parchment paper (not the kind the ancient Greeks wrote on genius, the kind you cook with) on top of it.
Now put your sweet potato in the middle, sans bowl, and fold up the sides to make a rectangular package with one long seam down the middle. With your fingers, crimp your seams tightly.
Pre-heat your barbecue to 400 F. Place potatoes on grill and cook for 20 minutes per side. These are awesome with bison!
